Sweet potato skins are filled with the mashed potatoes and topped with brown sugar pecan streusel, miniature marshmallows and chopped dried cranberries. It’s like a sweet potato casserole in hand held form! Best of all, these potatoes can be made ahead of time and then popped in the oven right before it’s time to eat.
