Wrap the whole butternut in aluminiumfoile and put in the oven(180C) for 2h.
Cut in half, remove the seeds and blend the butternut with 50grams of butter. Season with pepper and salt.
Bake the mushrooms in hot butter and season with pepper and salt.
Brush the ponzu on the smoked eel and glaze shortly under a hot grill. Repeat two times.
