Ingredients
- 2 each russet potatoes
- 2 each summer squash
- 1-1/2 cups heavy cream
- 1/2 cup onion
- 1-1/4 cup cheese
- 2 tbsp. fresh parsley
- 1/2 tsp. fresh thyme leaves
- 1 each salt to taste
- 1 each black pepper to taste
Recipe Description
Potato and Summer Squash Gratin is a recipe I made back in 2014 and decided to make it again and give it a facelift. I’ve added a couple of new ingredients and changed up the recipe slightly and of course took new photographs.
What has happened is that this is so MUCH BETTER than the original recipe: the flavor is elevated and it is out of this world delicious! Simple to make and if you garden it’s very inexpensive to boot.
I used our fresh summer squash and herbs from the garden to re-make the dish and it was so well received by my husband that he had two monster portions for dinner – and no meat was necessary for him to be satisfied and full.
