Recipe Description

MEATBALLS:
2 lbs ground beef
1-2 cups bread crumbs 
1 eggs
salt & pepper for taste


SWEET & SOUR SAUCE:
1 cup pineapple juice
½ cup brown sugar
⅓ cup white vinegar
2 TBSP soy sauce or teriyaki sauce
2 TBSP corn starch



Recipe Directions

MEATBALLS:
In large bowl, mix all the ingredients together till mixed well. Add extra bread crumbs if mixture is to wet & sticky.

Make desired sized meatballs.

In frying pan, fully cook meatballs or slightly brown in frying pan & finish cooking in the oven.


SWEET & SOUR SAUCE:
In small bowl, add corn starch to pineapple juice. To avoid clumps, keep stirring as you add the corn starch to the juice.
 
Mix corn starch mixture & all other ingredients together in sauce pan.

Over medium-high heat, stir constantly till it starts to bubble & the color changes from a cloudy milky brown color liquid to a light-medium caramel color thick glaze.

Remove from heat & as sauce cools it will thicken a little more.

Serve over rice or noodles with pineapples on the side.


HELPFUL NOTES & HINTS:
Recipe is extremely easy to double.

Could use any meatball recipe if you have a favorite recipe or in a quick pinch frozen meatballs work great.

If you are only using the juice from the canned pineapple but do not get quite a cup of juice, add enough water to reach a full cup.

If doubling the sauce recipe but do not want a super sweet sauce, use 1 cup of juice & 1 cup water.

Add extra teaspoon of vinegar for extra tartness to sauce.
