- 1 cup Basmati rice
- 2 Carrots
- 1 Red onion
- 1 head Broccoli
- 225g Tofu

Recipe Directions
1. Cook the Basmati Rice
On stove top, bring water an a pinch of salt to a boil. For every cup of rice add 1 and 3/4 cup of water. Add the rice, stir, bring the heat to low, cover and let it steam cook for about 15-20 minutes. Remove from stove when ready. You may use a rice cooker if available.
2. Prepare the Vegetables
Chop into small pieces the garlic or ginger. Cut all the vegetables into bite size pieces (about an inch big). Cut the base of the broccoli and separate into florets.
3. Cook the Veggies
About 5 minutes before the rice is done cooking, heat a drizzle of oil in a large frying pan. Add the onions, garlic or ginger and stir for about 1 minute on medium heat. Add the other vegetables and gently stir for another 2 minutes.
4. Add the Cooked Basmati Rice
Add the rice and season with dried parsley. Gently stir.
5. Add the Tofu
Add the tofu and sprinkle with the chili flakes or dried oregano, a pinch of salt and pepper to taste. Cook for 2-3 minutes.
