A wide variety of seafood, including swordfish, is used throughout Italy and is most often prepared by grilling with light seasoning. The meat from swordfish is relatively firm and can be prepared in several different ways. In this episode, I use my sous vide to inject more flavor into this Italian-Style Swordfish dish.
