- 1/4 teaspoon garlic powder

- 2 cups cooked quinoa
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 1 clove garlic
- 1 whole avocado
- 1 whole mango
- 1 whole green bell pepper
- 1 whole grilled corn on the cob
- 1/2 cup blueberries
- 1/4 cup feta cheese
- 1/4 cup cilantro
Recipe Description
Chicken is coated in a variety of spices and herbs and then grilled until blackened. It’s sliced and placed on top of a bed of quinoa that’s been tossed with a delicious cilantro-lime vinaigrette. Then it’s piled high with fresh mango, blueberries, avocado, grilled corn, green peppers, and feta cheese.
