- 1 medium onion diced
- 1 cup diced celery
- 1 cup diced carrots
- 1/2 cup diced green bell pepper
- 3 cloves garlic, mined
- 2 cups cooked brown rice
- 1 cup chow mein noodles
- 1/2 cup cashews
- 1/4 cup green onions, sliced
Recipe Description
This Cashew Chicken Casserole is a healthier and cheaper alternative to your favorite Chinese takeout order! Chicken, brown rice, and lots of veggies are tossed with a hoisin sauce before baking and then topped with cashews and chow mein noodles. This is a kid favorite and will be requested over and over again!
