Casseroles are not only a necessity in any busy person’s life, but also usually pretty darn good. This Chicken Enchilada Casserole goes together easily, tastes good and can be customized to your taste. We like it a little on the spicy side in our household, so I usually add an extra jalapeno or several. You can use the cooked chicken you have in the freezer or a rotisserie chicken from the deli, it’s all good.
