Ingredients
- 4lb boneless, skinless chicken breasts (fat trimmed off)
- salt & pepper to taste
- 2 tablespoons butter
- 2 tablespoons Fillipo Berio Declacato Extra Virgin Olive Oil
- 1 Medium red onion (chopped small)
- 2 cloves garlic (crushed)
- 1 Large stalk celery (chopped small)
- 1 Medium carrot (shredded)
- 1/4lb white button mushrooms (quartered)
- 1 can petite diced tomatoes (14.5 oz can)
- 1 cup red wine
- 1/3 cup chopped fresh parsley (divided)
- 1/2 teaspoon chopped fresh rosemary
- 1/4 teaspoon chopped fresh basil
- 1/4 teaspoon chopped fresh oregano
Recipe Description
Chicken Cacciatore also known as “hunter-style chicken” simmers in a robust tomatoes, herbs and red wine sauce. This is a recipe found in a Sunset cookbook that was originally published in 1972 and updated in 1981. This book is stained and dog-eared from all the use it gets. It was so good and is a favorite recipe of mine!
