Easy Empanadas

Ingredients
· 3 cups chopped, cooked chicken
· 1 (8-ounce) package shredded Colby and Monterey Jack cheese
· 4 ounces cream cheese, softened
· 1/4 cup chopped red bell pepper
· 3 chopped chipotle pepper
· 1 chopped potato
· 1 jalapeno, seeded and chopped
· 1 1/2 teaspoons salt/pepper
· 3 packages refrigerated pie crusts
· Water
1. Sauté: Red bell pepper, jalapeno, potato
2. Preheat oven to 400 degrees
3. Grease baking sheet
4. In large bowl, combine all ingredients
5. Unroll pie crusts on floured surface
6. Cut rounds with cookie cutter (3inch)
7. Arrange 1 round on a clean, flat surface and brush the edges of crust with water.
8. Add spoonful of chicken mixture to center of each round
9. Fold dough over filling
10. Press edges with forks to seal
11. Repeat for all rounds
12. Bake for 12-15 minutes
