Ingredients
- 1 Pound Ground Chicken, Turkey or Beef
- 1/2 Onion
- 1 Jalapeno Pepper, seeds and veins removed
- 1 Cup Tomato Sauce
- 2 Cloves of Garlic
- 2 tsp. Ground Cumin
- 2 tsp. Chili Powder
- 1 tsp. Cilantro
- 2 tsp. Kosher Salt
- 2 Cups Pinto Beans
- 1 Cup Corn Kernels
- 16 Small Corn Tortillas
- 2 Cups Enchilada Sauce (red or green)
- 2 Cups Shredded Cheddar or Mexican Blend Cheese
Recipe Description
This casserole is so good, comforting, a little spicy, a lot cheesy, filling, too! Perfect for feeding the family an a cooler fall evening, a great weekend dish, too! I used ground chicken, but you could really use any ground meat or even a meat substitute if you choose. Very easy to throw together and very satisfying!
