- 1 lb. store-bought, fresh pizza dough (found in bakery department, pre-rolled if possible)
- 1 tbsp. extra virgin olive oil
- 1 lb. boneless, skinless chicken breasts, chopped into bite-size pieces
- 1 tbsp. butter
- 1 large yellow onion, chopped
- 3-4 garlic cloves, minced or pressed
- 1 container (10 oz.) frozen chopped spinach, thawed, pressed and drained
- Sea salt and fresh ground pepper, to taste
- 1 small container (4 oz.) crumbled goat cheese
- Splash or two of lowfat milk
- ½ cup shredded mozzarella or italian blend cheese
- fresh basil, chopped for topping
