Ingredients
- 1 lb. assorted mini pepper sliced in 1/2 lengthwise with veins and seeds removed
- 1 1/2 lbs ground beef
- 1 small onion finely chopped
- 1 1/2 cups cooked white rice
- 3 tablespoons taco seasoning
- 1 can salsa style tomatoes
- 2 cups shredded cheddar
- 1 cup shredded Monterey Jack
- Fresh chopped cilantro
- Finely diced avocado
- Sour cream
Recipe Description
These sweet mini peppers are filled with ground beef and rice that has been simmered in taco seasoning and salsa. They are then baked just until the pepper softens and the flavors meld together! They are topped with cheddar and Monterey Jack cheese and popped back into the oven until the cheese is all gooey!
