- 5-6 Chicken Thighs, boneless/skinless
- Zest of 1 Lemon
- ¼ C Lemon Juice (freshly squeezed)
- 1 tsp Thyme, dried
- 4 Garlic Cloves, minced
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 Onion, Sliced thinly
- 1 C Long Grain Rice
- 2½ C Vegetable Broth (or chicken)
