Ingredients
- 2 cans (6.5 ounces) chopped clams
- 1⅓ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon Old Bay Seasoning
- ¼ teaspoon cayenne pepper
- 1½ tablespoons chopped chives
- salt and pepper to taste
- 3 tablespoons clam juice
- 1 tablespoon lemon juice
- 2 eggs, beaten
- 2 tablespoons milk
- Oil, for frying
Recipe Description
I would suggest making the clam fritters smaller than I did, since clam fritters are usually an appetizer. I ended up making almost a whole meal out of just three of these! Of course, you could keep them as big and make a vegetable or garden salad on the side for a whole meal.
