Ingredients

  • 1 lb. clean shrimp (I would pull of the shell, even the tail)
  • 2 Tablespoon oil
  • 1/8 cup creole seasoning
  • 4 cups of chicken broth
  • 1 cup corn (I used my frozen corn that I put up this year)
  • 4 Tablespoon butter
  • 1/4 cup shredded cheddar cheese
  • salt and pepper to taste

Recipe Description

I looked at several recipes then made my own. We loved, loved, loved this. My husband even said, why haven't we had this before. My grandson doesn't like grits but he tried it and had 2 bowls. You can double recipe, just make sure you use a bigger sauce pan. We usually have this once a month now. So yummy.

Recipe Directions

  • Put shrimp into large baggy with seasoning, seal and toss around to coat.
  • Pour broth into a large sauce pan.
  • Add salt, corn, slowly add grits while stirring.
  • Bring to a boil, turn down to simmer, with lid. Stir often to keep from sticking.
  • Cook for 45 minutes, add butter, stir.
  • Add cheese at this point and stir, unless you want to just add to the top of grits.
  • Put oil in skillet, heat up, add cleaned shrimp, cook until done. Mine took about 5 minutes.
  • Put grits into bowl, add cheese at this point, if you didn't stir into grits, place shrimp on top and Serve.
